Product Description of D-(+)-Glucono-1,5-lactone CAS#90-80-2

Delta-Gluconolactone (GDL) is the lactone of D-gluconate, naturally present in honey, fruit juice, wine and fermented foods.

Coded E575 as a food additive, it acts as sequestrant and acidulant to reduce pH and inhibit food spoilage. It is also used as curing, pickling and leavening agent, widely applied in feta cheese making.


Product Application of D-(+)-Glucono-1,5-lactone CAS#90-80-2

D-(+)-Glucono-1,5-lactone (GDL) is mainly used as acidulant. It hydrolyzes slowly in water to form gluconic acid and adjust pH value. Its acid releasing rate is affected by temperature, concentration and initial pH, slow at room temperature and faster under heating.
